Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon fresh thyme
  • 1 garlic clove, crushed
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 large sweet potatoes

Instructions

  1. Preheat oven to 350F.
  2. In a large bowl, combine olive oil, thyme, garlic, salt and pepper.
  3. Peel sweet potatoes and slice into 1/2-inch thick planks. Place in the bowl with olive oil mixture and toss to coat. Arrange sweet potatoes in a single layer on a nonstick baking sheet. Bake 30 minutes, or until golden brown on the edges.
